建立功能性微生物筛选模型，锚定特质微生物中功能性基因及其产物，明晰微生物遗传背景，研究其功能特性及作用机理，开发食品级功能性微生物。
2.食品中致病微生物检测及生物控制
研究致病微生物的分子生物学及免疫学检测技术，检测食品中致病微生物及其毒素并开发检测试剂盒；
