孟祥红,男,1973年12月生,博士,教授,副院长,博士生导师,**;E-mail:mengxh@ouc.edu.cn。一、教学情况主要从事食品生物化学教学和研究工作。承担本科生课程《生物化学》和研究生课程《高级生物化学》两门课程的教学工作,所讲授的《生物化学》课程在2004-2005年度中国海洋大学教学评估中获得优秀,2008年学校观摩课程。山东省精品课程《生物化学》主讲教师和建设者;目前作为主要人员参与山东省级教学团队“食品生物化学课程群教学团队”的建设。二、科研情况1. 科研方向海洋活性物质在农产品贮藏加工中的应用基础;海洋生物资源营养成分分析和评价;食品贮藏加工中品质变化和控制的生化基础;2. 在研科研课题(1)果蔬产品生物污染物分析和脱除技术研发,2012-2015,国家科技计划课题子课题(863计划);(2)壳寡糖抑菌过程中差异蛋白质组分析及蛋白质氧化损伤研究,2012-2015,国家自然科学基金;(3)海洋活性物质在农产品贮藏加工中的应用基础,2011-2013,教育部新世纪优秀人才支持计划。3. 代表性学术论文和著作(1)《园艺产品采后生物学基础》,副主编,主编:田世平、罗云波、王贵禧,科学出版社,2011.(2) Ma ZX, Yang LY, Yan HX, Kennedy JF, Meng XH*.
