个人简介

近年来主要围绕海洋食品(鱼虾贝藻)稳态化递送矿物质营养素(钙、铁和锌)开展科研工作,在海洋微藻营养功能特性及相关食品开发方面也有一定的科研积累,已在国内外知名期刊发表学术论文 30 余篇,他引次数达 300 余次。迄今(-2020/04)以第一或通讯(含共同)作者发表 SCI 论文 22 篇,其中一区 12 篇、二区 8 篇(按发表当年中科院大类期刊分区)。

承担了本科生核心课程《食品工程原理》的教学工作,是国家精品在线开放课程《食品保藏探秘》课程团队主要成员,担任了食品科学与工程专业 2016 级班主任,曾指导本科生获得了全国大学生食品

工程虚拟仿真大赛总决赛一等奖。讲授多门本专业研究生课程,已指导多名研究生获得了国家奖学金。

研究进展

1. 矿物质营养素的纳米递送:利用水产蛋白、磷脂、酸性多糖和核酸作为天然聚阴离子模板,进行了钙、铁和锌纳米营养补充/强化剂的绿色制备和生物可利用性评价;利用海洋微藻作为细胞工厂,进行了多聚磷酸钙、铁和锌盐纳米颗粒的生物制备和生物可利用性评价。

2. 矿物质营养素的稳态代谢:研究了胶原肽调控机体铁稳态的作用及分子机制,主要从细胞和动物水平上评价了胶原肽及其主要降解产物对肠上皮细胞铁吸收转运相关蛋白的表达、肝细胞铁稳态相关激素的分泌以及脯氨酸羟化酶-低氧诱导因子信号通路等的影响。

3. 海洋微藻营养功能与加工:围绕海洋聚球藻的规模化培养、藻体收集、营养组成和安全性评价等开展

了研究,并评价了微藻中纳米多聚磷酸体、藻蓝蛋白和多糖等成分在维持肠道健康方面的功能活性。
