彭晓丽,女,博士,副教授,博士生导师。
一、研究方向
食品营养研究,包括食品营养因子对糖尿病并发症(肾病、眼/脑/肝部病变)、食品安全危害物损伤机体的营养干预研究;
食品分子毒理研究,包括食品安全危害因子在实验动物、人细胞水平对细胞凋亡、线粒体功能、蛋白组/表达谱、信号转导、自噬、氧化胁迫等方面的影响;
果蔬清洗剂研发。
