胡兴长期从事D-甘露糖异构酶(MIase)高产菌株的筛选构建、食品成分(包括植物活性成分)与化学危害物与生物大分子的相互作用等工作,发表SCI论文30余篇,其中以第一作者或通讯作者身份在Comprehensive Reviews in Food Science and Food Safety、International Journal of Biological Macromolecules、Journal of Agricultural and Food Chemistry、Journal of Functional Foods等SCI上发表8篇;主持国家青年基金一项,参与团队项目5项。
