专著及文章情况：著有专业著作4部，代表性专著《酶与酶工程及其应用》（副主编，主笔16万字，2006年7月化学工业出版社出版）和《焙烤食品工艺学》（副主编，主笔25万字，2001年8月中国轻工业出版社出版）。在国内外刊物发表学术论文80余篇，其中SCI、EI收录的论文50多篇。
