杨兴斌,男,1969年10月生,汉族,陕西榆林市横山人,现为陕西师范大学食品工程与营养科学学院院长、教授、博士生导师。1997年获北京化工大学精细化工工学硕士学位,2004年获空军军医大学(原第四军医大学)医(药理)学博士学位。澳大利亚西澳大学(University of Western Australia)访问教授。担任陕西省食品绿色加工与安全控制工程实验室主任,陕西省农产品贮藏加工危害因子风险评估实验室主任,西部果品资源高值利用教育部工程研究中心技术委员会副主任,陕西省食品科学与工程实验教学示范中心主任,教育部药用资源与天然药物化学重点实验室、西北濒危药材资源开发国家工程实验室学术带头人。目前,主要从事食品加工与安全检测、微生态营养与代谢、保健食品及特膳食品开发等研究工作。
1)基础理论研究:系统研究秦巴山区植源性功能糖与类黄酮的营养聚集化精深加工和营养调控分子机制,发展了功能糖与类黄酮的营养互作理论,提出食品营养物质基础整体观的“网络食品功能学”研究技术;研究功能糖基于肠菌群代谢产生的琥珀酸激活肠道糖异生进而发挥间接的体内血糖稳态调控机制,完善功能糖与肠菌群互作调节血糖稳态的营养理论与科学认知;发现长期被推测为“致癌”的限量摄入物硝酸盐、亚硝酸盐及富含硝酸盐的菠菜在维持血管内皮功能稳态中的重要营养价值;阐明含三甲胺结构的卵磷脂等甲基供体营养素经肠道生理菌群代谢产生氧化三甲胺(TMAO)进而诱发肝脂代谢危害,揭示肠道AKK菌与肝损伤的关系,提高卵磷脂等营养素的营养与安全“利与弊”的科学认知。
2)产品产业服务:参与驰名产品“白加黑”双层缓释片的研发工作(德国拜耳公司);先后为企业开发爽QQ牌水苏糖口香糖(企业标准Q/DSP 010-2007)、肠内美人牌水珍唯美食品、水苏冲剂(国食健字G**)和德施普粉(国食健字G**)等系列功能或保健食品(市场化商品),产生重要的经济与社会效益;研究猕猴桃的采后气体射流冲击干燥和冷冻干燥技术及理论,开发猕猴桃的休闲食品;开发马铃薯主食化馒头与面条食品及血糖生成指数( GI)馒头;探究功能糖与多酚的互作营养理论,开发“益常顺”牌茶多酚复合益生元速溶茶和固体饮料、速溶益生茯砖茶、大豆益生菌发酵国体饮料和酵素等肠道微生态功能食品产品;成功研制“水槽升降式”新一代豆芽机食品装备。熟悉保健食品的申报注册工作,具备丰富的生物制品产、学、研一体化与产业战略发展管理经验。
3)主要学术任职:担任Food & Function(SCI一区)编辑顾问委员、Frontiers in Pharmacology(SCI二区)和Frontiers in Nutrition(SCIE)评论编辑及编委,兼任《Journal of Food & Nutritional Disorders》和《Journal of Food Processing & Technology》杂志主编,以及《食品科学》、《食品安全质量检测学报》、《农产品加工》、《食品工业科技》、《陕西师范大学学报》、eFood等杂志编委。兼任陕西省高校科协联合会理事、陕西省农业工程学会常务副理事长、陕西省食品科学技术学会副理事长、陕西省营养学会副理事长、中国校园团餐联盟专家委员、中国农学会食物与营养专业委员会常务委员、中国农产品开发服务协会农产品加工业分会委员,马铃薯主食开发技术协作组理事会副理事长,中国猕猴桃产业技术创新战略联盟理事,国家农产品加工营养大数据创新战略联盟副理事长。
4)专利与论著:先后获“一种多功能复合速溶茶及其制备方法和用途,ZL5.9”、“一种水槽升降式豆芽机,ZL5.2”、“一种紫阳富硒绿茶含硒多糖及其制备方法和用途,ZL9.2”、“一种协同降血脂的双层缓释片,ZL7.1”等授权专利10余项;参编《功能食品学》(科学出版社,2017年8月1日出版, 副主编)、《临床新药手册》(清华大学出版社,2006年12月出版,编委)等编著5部;参与制订速溶茶等行业标准4项;先后在Antioxidants & Redox Signaling (IF 8.2), Trends in Analytical Chemistry (IF 8.4), American Journal of Clinical Nutrition (IF 6.5), Free Radical Biology & Medicine (IF 5.7), Molecular Nutrition and Food Research, Journal of Agricultural and Food Chemistry, Food & Function, Food Chemistry等SCI杂志发表论文150余篇,论文被引3000余次,论文H指数为34。
5)科技项目与获奖:先后主持国家自然科学基金面上项目4项及国家重大科技专项等项目10余项。先后获“天然多糖及寡糖的色谱质量控制技术构建与生物功能研究”、“食物类黄酮与功能糖的化学与分子营养的应用基础研究”、“功能糖与类黄酮的分子营养及互作机制研究”等陕西省科技进步一等奖1项、二等奖2项和陕西高等学校科学技术一等奖2项、二等奖1项;2018年获得第二届全国沙产业创新创业大赛“双创之星”荣誉称号。2011年获中国食品产业产学研创新发展杰出科研人才奖,2013年获陕西省职工优秀科技“创新人物”称号,2014年获省部级劳动模范、全国模范军队转业干部称号(中共中央组织部等四部委“国转联[2014]4号文件”联合授予),2014年入选“陕西省中青年科技创新领军人才”,2019年入选陕西省创新人才推进计划(科技创新团队)。
