  Polysaccharides are the main constituent of plants and the most abundant natural material in the world. New schemes for their sustainable exploitation have emerged (the ‘biorefinery’ concept), especially because of the shortage of fossil oils. Our work has been focused on the development of value-added chemicals and materials from plant polysaccharides by various chemical and biochemical means. In an example of water-soluble O-acetyl galactoglucomannans (GGMs) which are the major hemicellulose type in softwood, e.g. Norway spruce (Picea abies), and can be isolated with a large quantity nowadays. Latest studies have focused on applications of spruce GGM or its derivatives in different areas. More recently, spruce GGM has been assessed as molecular anchors to alter surface properties of cellulose towards developing ‘smart’materials for (bio)detection and diagnostics or bioactive functionalized materials. Moreover, nanocellulose, owing to its superior properties such as excellent mechanical strength and flexibility, biocompatibility, and environmentally-friendly nature, has found its potential applications in a broad spectrum of areas, e.g. organic electronics, biosensors, tissue engineering, etc. Recently, much research has focused on tailoring cellulose into nanostructured composites.
